Carrot and ginger soup

You will need:

2 pounds of carrots, chopped

2 onions, peeled and chopped

6 cups of vegetable broth

3 tbsp of ginger, grated

 3 garlic cloves, chopped

A cup of coconut milk

Black pepper, sea salt, and onion powder to taste

2 tbsp of coconut oil

2 tbsp of collagen powder

Preparation: In a pot, add the carrots, broth, ginger, and garlic and bring the mixture to boil and then leave it to simmer. Next, in a separate pan, sauté the onions and add the collagen and cook until caramel-like. Add the vegetable broth and the sautéed onions in a blender and blend them well. Add the coconut milk and seasonings at the end.
