Red lentil soup
You will need:
¼ cup of coconut oil or ghee
2 sweet potatoes, peeled and chopped
An apple, peeled and chopped
An onion, chopped
2 carrots, peeled and chopped
Half a cup of red lentils
Half a tsp of cumin, ground
Half a tsp of chili powder
Half a tsp of paprika
4.5 cup of vegetable broth
An inch of ginger, peeled and minced
Black pepper and salt to taste
Coconut cream for topping
Preparation: Warm up the oil in a pot and add the potatoes, carrots, apples, and onions and cook until crystallized, i.e. about 10 minutes. Add the ginger, cumin, lentils, chili powder, paprika, and broth and cook the soup for 30 minutes until the ingredients soften and the mixture thickens. When ready, season it well and add the coconut cream.
